Sometimes a quick chocolatey fix is in order. We'd had a healthy week of eating noodles and vegetables and just fancied something sumptuous to go with a coffee. This rich treat is super quick to make and satisfies any sweet urges with its comforting combination of chocolate, crunchy biscuit and gooey marshmallow. We were tempted by Totally Tropical Marshmallows but the choice is yours.
100g unsalted butter
2 tablespoons of honey
300g dark chocolate, chopped
100g milk chocolate, chopped
100g digestive biscuits, broken into pieces
90g Magnificent Marshmallows, flavour of your choice chopped into small chunks
an 18cm square baking tin greased and lined with parchment paper
Simply put the honey, butter and all of the chocolate into a bowl suspended over a pan of simmering water and melt, gently stirring form time to time
Once melted add the biscuits to the chocolatey mixture
Tip the mixture into the tin
Squish the marshmallowy pieces into the chocolate and then leave to cool before putting into the fridge for a few hours to set.
