Magnificent Malted Chocolate & Kin Toffee Vodka Mousse

Since we conjured our new Magnificent Malted Drinking Chocolate we're loving making up recipes to use it in. It's made with some of the world's finest chocolate complimented by malty mellowness and coconut blossom sugar sweetness so it's very versatile and can elevate all manner of delicious treats. This comforting concoction was a Friday night treat we created when an indulgent ending to the week was required. It was quick and easy to make and the toasted oats and pecans added a crunchy texture whilst the addition of our friend, Judith's renowned Kin Toffee Vodka gave an additional caramelly sophisticated twist.

We only made enough for two generous servings, otherwise we'd have been tempted to eat more.

75g Magnificent Malted Drinking Chocolate
2 tablespoons Kin Toffee Vodka
30g unsalted butter
1 large egg - yolk and white separated
1.5 tablespoons of golden caster sugar
A cup of oats
9 pecan nuts chopped into small pieces
2 tablespoons of syrup or maple syrup or date syrup

Preheat oven to 180 degrees C

Mix the oats and pecans together then add the syrup and stir
Put the mixture onto a baking tray and bake in the oven, as ovens vary check after 15 minutes and if more crunch is required continue to bake and check every few minutes
Melt the butter in a bowl suspended over a pan of very gently simmering water then add the chocolate and melt
Once melted remove from the heat, stir until smooth then add the Kin Toffee Vodka
Add the egg yolk and stir to combine until smooth
Whisk the egg white until soft peaks form then add the sugar and whisk until stiff and glossy
Fold a spoonful of the egg white into the chocolatey mixture and then gently add the remaining egg white and continue to fold gently until completely combined whilst retaining as much of the air as possible
Put a quarter of the oats into the bottom of each glass or bowl
Top the oats with mousse
Divide the remaining nutty oaty mixture to add a crunchy topping for the moreish mousse
